I find that most distillers have a favorite cask, and if you ask nicely, they’ll give you a taste. Ian Schmidt, partner at Tin Shed Distillery in the Adelaide Hills, has a favorite. It’s up on the second level in the racks. And some day, if you get really lucky,
“Unfortunately, Vic can’t spell Smokey properly. It is my favorite cask because it produced Iniquity Gold Series batch 3. That was a superstar whisky that won lots of medals and accolades from the likes of Dave Broom and Charlie Maclean. It also produced #57 Den’s Dram as a second fill and is on its way to producing something special as a third fill. It is only a 100-liter cask, but was given to me by Roger Deaves with a wink and a smile. Sadly, Roger has passed on, which is a great loss to the industry and to me personally.”
